This is for that time I made Monster Cookies on instagram and everyone asked for the recipe :)
Fun fact: when I was a kid I used to dream of a day when I'd become a pastry chef and open my own bakery. Although we're not in the business of making baked goods, our products are created in ways that are a lot like baking. We combine different oils, butters, salts and powders to make soap and bath bombs, similar to how you might make a batch of cookies at home. We strive to create a product line that is as visually appealing as your favourite boutique bakery. Our soap bars often get mistaken for little cakes!
A few things about this recipe:
These were made by hand and mixed with a wooden spoon but if I had the luxury of getting a stand mixer I imagine this would've been much easier!
I often make a batch of cookie dough, form them into cookie dough balls and freeze those dough balls to be able to bake later. Simply freeze the formed dough balls on a sheet pan and place in the freezer, the next day put all your frozen dough balls into a sealed container for later use. This allows us to bake our cookies as we want them and aren't "forced" to eat a large quantity of cookies all at once (I mean I could do it if I were really forced to). I find baking the cookie dough from the frozen helps to keep them crispy on the outside and chewy on the inside once they're baked.
Ok that's enough, here's the recipe!
Ingredients:
1 c. butter or margarine
2 1/2 c. peanut butter
1/2 tbsp. syrup or honey
2 c. brown sugar
2 c. granulated sugar
6 eggs
1 tsp. vanilla
4 tsp. baking soda
9 c. oats (I used Old Fashioned oats - the big ones)
1 c. chocolate chips
1 c. smarties or M&Ms
Method:
Cream together butter, peanut butter and honey until light and fluffy. Mix in the eggs then add vanilla and baking soda. Add the oats, mixing until combined then the smarties and chocolate chips!
This recipe will require some serious muscle if you are mixing by hand as the oats act as the binder in your recipe. Note: there's no typo, there is no flour in this recipe. I let the cookie batter sit in the bowl overnight in the fridge to soften up the oats. You may not need to do that if you were using quick rolled oats (this may need testing). Scoop oversized mounds of cookie dough onto a parchment lined baking pan and use a fork to flatten the dough ball allowing it to bake more evenly.
Bake at 350 F for 10 - 12 minutes. Makes about 5 dozen Monster Cookies.
