Chewy Chocolate Chip Cookies

Who doesn't love a classic Chocolate Chip Cookie?! Today I'm sharing my favourite classic, chewy chocolate chip cookie recipe. 

You might be wondering why you're finding a chocolate chip cookie recipe from a soap maker. Well, in my early childhood years I knew I wanted to create and build my own business. One of the businesses I always dreamed of opening was an amazing local cafe that would sell fancy coffees and the best ever made from scratch cookies. Another dream I had was to create an amazing local bakery. 

It turns out soap making is so similar to the baking process. We combine various amazing ingredients to come up with an entirely different, delicious and beautiful treat in the end.

Chewy Chocolate Chip Cookies

Ingredients

1 cup margarine or butter

3/4 cup white sugar

1 1/2 cup brown sugar

2 eggs

1 tsp vanilla

1 1/2 tsp baking soda

3 cups flour

1 bag chocolate chips (300g bag) - feel free to substitute chocolate chips for M&Ms, Smarties or Mini Eggs

Directions

  • In a medium bowl, cream together margarine, and sugars until smooth. Add eggs and vanilla, cream together.
  • Add baking soda
  • Stir in flour one cup at a time, then add chocolate chips.
  • Scoop each cookie dough ball onto a baking pan lined with parchment paper. Tip: I scoop the entire recipe onto a parchment lined pan and put them in the freezer to freeze overnight. Once frozen, the dough balls can be put into a container and you can bake as needed.
  • When you're ready to bake your cookies, put the frozen cookie dough ball onto a parchment lined pan. Bake at 350F for 10 - 12 minutes. Baking the cookie from frozen will allow the cookie to have a nice crisp outside and a delicious chewy inside.
