White Chocolate Chocolate Chip Cookie Recipe

White Chocolate Chocolate Chip Cookie Recipe

Ingredients:

5 Semi Sweet Chocolate Squares - I have used up to 5 ounces total for a very rich chocolate-y taste and as low as 1 1/4 ounces for a lighter chocolate taste

3/4 cup margarine or butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 tsp vanilla

1 egg

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 2/3 cup all purpose flour

1 package white chocolate chips - I use an entire bag of these for the recipe (226 grams)

Method:

Measure the semi sweet chocolate into a small saucepan set to low on stovetop. There will be less chance of burning the chocolate if you have a double boiler. Once the chocolate is 90% melted down, add your margarine or butter and stir it all together to a liquified consistency.

While the above are melting, measure sugars, vanilla and egg into a bowl. Beat these ingredients together until creamy in texture. You can mix this by hand or in a stand mixer with paddle attachment. 

Check on your chocolate/margarine mixture and make sure it's not burning. 

Mix baking powder and baking soda into the sugar and egg mixture. When the chocolate + margarine mixture is fully liquified, pour it into the sugar + egg mixture. You'll want to make sure to mix thoroughly and quickly so the heat of the chocolate mixture doesn't cook the egg. Tip: let the chocolate mix cool down before mixing in to egg mix to eliminate this concern. 

Stir in flour then add chocolate chips. 

Scoop onto a baking pan lined with parchment paper. Tip: I scoop the entire recipe onto a parchment lined pan and put them in the freezer to freeze overnight. Once frozen, the dough balls can be put into a container and you can bake as needed.

When you're ready to bake your cookies, put the frozen cookie dough ball onto a parchment lined pan. Bake at 350F for 10 - 12 minutes. Baking the cookie from frozen will allow the cookie to have a nice crisp outside and a delicious chewy inside.
